When I am saving my files in xls format for sharing, the font changes back to Arial. Is there a way to stop this?
Also is there a way to change the default font from Arial to Helvetica?
Mac OS X: 10.7.4
for the default font in Calc (things might be a bit different on a mac)
Format>Styles and Formatting (or press F11)
Right click the default style and select modify
change the font to what you want.
Not sure why the font changes when saving to xls - is this showing up on your machine or when you give it to someone else? If only on their machine probably because they have Arial but not Helventica installed
I have tried doing the same but the font changes to Arial from another font(helvetica, Times new roman). It is showing on my system as well as on other systems.
I have installed helvetica on other system, but it is the same. The font changes to Arial.

I don't have Helvetica on my system but but in LO your file shows the font is Hevetica (I obviously see a substitute font). When I save as either xls or xlsx then close and reopen, sure enough, the font is now Arial.
Thinking that you may be using CTL, I enabled this on my system. I now have English(India) as my Western language and Hindi as my CTL default. Now I see that the western font is Helvetica and the CTL font is Arial.
Your problem still exists when I change both to Linux libertine G (had to test with something else other than Helvetica)
Now I have enabled support for Asian Languages - no language selected and I see that your default style is using Arial for this as well as CTL
I have now changed your document to have a default style containing libertine G for Western text front family, Asian text font family and CTL font family.
Now when I save as xls the font stays as Libertine G so I guess this would be the same for Helvetica. I have not checked what Helvetica supports in terms or Asian characters so you might come unstuck on this (also not checked on what Libertine G supports, this was just a random choice to let me test things)
My assumption is that during the conversion to xls the multiple fonts in the default style do not all get looked at correctly and that the Asian font overrides the Western font.
